1 1/2 tsp.

dried basil

1 1/2 tsp.

dried oregano

1 1/2 tsp.

dried parsley

1 1/2 tsp.

garlic powder

1/2 tsp.

onion powder

1/2 tsp.

dried thyme

1/2 tsp.

salt (optional)

1/8 tsp.

freshly ground black pepper

4 1/2 tbsp.

extra-virgin olive oil

1/8 tsp.

crushed red pepper flakes (optional)

1/3 c.

freshly grated Parmesan cheese (optional)

fresh parsley (optional)

  1. Preheat the oven to 400°F. Line a large rimmed baking sheet withparchment paper or foil.
  2. Slice the sausage into thick coins and arrange the veggies and sausage on the prepared baking sheet.
  3. In a small bowl combine the basil, oregano, parsley, garlic powder, onion powder, thyme, crushed red pepper flakes, and salt and pepper if desired with the olive oil. Stir to combine.
  4. Pour the seasoning-and-oil mixture on top of the veggies and sausage and toss to coat.
  5. Place in the oven and cook for 15 minutes. Remove from the oven, toss the veggies and sausage, and return to the oven for another 10 to 20 minutes or until the vegetables are crisp-tender.
  6. Top with freshly grated Parmesan cheese and parsley if desired.
